founded by executive chef, josh novak in november of 2008, the hollar specializes in the fusing of southern cuisine with fresh local ingredients. the result is comfort food done right!

a native of florida, chef novak attended auburn university and is a graduate of the culinary institute, le cordon bleu. managing to bring a taste of the south with him to madrid, new mexico, he has surprised both locals and tourists alike with a unique menu featuring a myriad of delicious and savory flavor combinations.

about the name; “hollar” is a southern derivation of the word “hollow”, meaning a secluded spot nestled between two hills.

Corned Beef Sandwich

Clove-rubbed corned beef and coleslaw between two pieces of cowboy fry bread. Served with a side salad or fried potatoes.

 

Wild Turkey Club

Thick cuts of roasted wild turkey, wild onions, lettuce, tomato, mayo, and black bread.

 

 

Brisket Sandwich

Slow-smoked beef brisket cut into thin slices, pickled okra, wild onions, tomatoes, and black bread. Served with a side salad or fried potatoes.

 

Bison Burger

Potato bun, lettuce, tomato, wild onions, and pepper jack cheese. Served with a side salad or fried potatoes.

 

Mutton Stew

Tenderized mutton, carrots, celery, tomatoes, onion, rosemary, and black pepper. Served with two sourdough biscuits.

 

Wild Boar Shoulder

Pan-seared wild boar, cracked peppercorns, and red wine glaze. Served with hot corn cakes and a side salad. 

 

Whole Quails

Two whole roasted quails stuffed with oregano and garlic. Served with roasted beets, leeks, and potatoes.

All I can say is WOW!! For such an out of the way place The Hollar served up the best meal I’ve had in MONTHS! Neat atmosphere, great service, and good prices - especially considering the amount of amazingly tasty food they served us. Not your standard burger or burrito joint and miles ahead of the typical roadside stop. Well thought out, subtle flavor combinations and a great selection for small menu. Simply can’t say enough good about this little gem!

I have eaten here twice and have been very pleased both times. I have had the burger, fried okra, and fish and chips. Everything was good quality and tasted great. They also have a great beer selection. For a place in small town Madrid, I am very impressed.
